Savor the decadent taste of French onion soup fused with juicy beef roast on a melty cheese bun in this easy slow-cooker recipe.
Ingredients:
  • 2 to 3 lb beef boneless chuck roast
  • 1 tablespoon Montreal steak seasoning
  • 1 1/2 teaspoons salt
  • 1 tablespoon vegetable oil
  • 2 tablespoons butter, melted
  • 2 tablespoons Muir Glen™ organic tomato paste
  • 1 tablespoon Dijon mustard
  • 1/4 cup packed brown sugar
  • 2 cups thinly sliced yellow onion
  • 6 cloves garlic, finely chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons sherry vinegar
  • 12 burger buns, split
  • 2 cups shredded Swiss cheese (8 oz)
  • 1/4 cup chopped fresh Italian (flat-leaf) parsley leaves
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Trim any excess fat from the beef, then season it with steak seasoning and salt. Heat oil in a large skillet over medium-high heat and sear the beef for 2 to 3 minutes on each side until browned. Transfer the beef to the slow cooker.
  • In a large bowl, whisk together melted butter, tomato paste, and mustard. Add brown sugar, onion, and garlic; pour mixture over beef. Cover and cook on Low heat setting for 8 to 10 hours until beef is tender.
  • Place the beef on a cutting board and allow it to rest for 5 to 10 minutes until it cools down. While waiting, combine cornstarch and vinegar in a small bowl. Add this mixture to the liquid in the slow cooker, then cook on High heat for 5 to 10 minutes until it thickens. Shred the beef and add it back to the cooker.
  • Preheat broiler with oven rack 4 inches away. Arrange buns, split sides up, on a large baking sheet. Top bun halves evenly with cheese. Broil for 1 to 3 minutes until buns are golden and cheese is melted. Spoon beef onto bun bottoms, sprinkle with parsley, and cover with bun tops.
