Family-friendly French onion crockpot dinner ready in 15 minutes prep.
Ingredients:
  • 36.40 gm olive oil
  • 4 pieces veal osso bucco (about 1.4kg), excess fat trimmed (see note)
  • 2 brown onions, cut into rings
  • 1 carrot, peeled, sliced
  • 2 celery sticks, sliced
  • 2 garlic cloves, crushed
  • 44.40 gm tomato paste
  • 20.00 ml plain flour
  • 1 tsp Beef Stock Powder
  • 40g sachet French onion soup mix
  • 1 tsp fresh thyme leaves, plus extra to serve
  • Mashed potato, pasta or rice, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat 2 tsp of oil. Sear the osso bucco for 2 minutes on each side until nicely browned. Transfer the osso bucco to a slow cooker. Lower heat to medium, add 1 tbs of remaining oil, and cook the onion for 7 minutes until soft and golden brown, stirring often. Transfer the onion to a plate.
  • In a hot pan, sauté carrot and celery in the remaining oil until starting to soften, about 3 minutes. Add garlic and cook for 30 seconds, then mix in tomato paste and flour. Slowly pour in 250ml (1 cup) water, stirring well to deglaze the pan. Add stock, soup mix, and thyme, and bring to a simmer.
  • Simply pour the mixture over the meat in the slow cooker, adding the onion on top. Cook covered on low for 6 hours or on high for 3 hours until the meat is very tender. Serve with a sprinkle of extra thyme over mash, pasta, or rice.
