Slow cooker French onion pork roast recipe

"Easy gluten-free roast with tender potatoes and sweet apples."
Ingredients:
  • 2 red apples
  • 1.7kg Boneless Pork Loin Roast
  • 3 fresh thyme sprigs, plus extra, to serve
  • 1 red onion, cut into thick wedges
  • 1kg baby coliban (chat) potatoes, cut crossways into 3 pieces
  • 4 garlic cloves, halved
  • 250ml (1 cup) Chicken Style Liquid Stock
  • 125ml (1/2 cup) Cooking Cream
Instructions:
  • Prepare the apples by halving and coring them. Slice one apple into thick wedges and thinly slice the second one. Lay the pork on a board. Using a sharp knife, make slits across the pork that are 2cm apart. Stuff each slit with a slice of apple and a touch of thyme.
  • Place the onion, potato, garlic, and remaining thyme and apple into the slow cooker. In a jug, combine the stock and mustard. Season the mixture and pour it into the slow cooker, stirring to combine. Finally, place the pork on top, cover, and cook on high for 4 hours or until the pork is fully cooked.
  • Place the pork on a serving plate and delicately spoon the vegetables and apple on top. Keep everything warm by covering with foil.
  • Skim off any excess fat with a spoon and discard. Pour in cream and bring to a boil on high heat. Simmer for 30 minutes until the sauce is reduced by half. Alternatively, transfer liquid to a large deep frying pan and simmer for 10 minutes until the sauce is reduced by half.
  • Drizzle the delicious sauce over the succulent pork and garnish with extra fragrant thyme before serving.
