Celebrate the arrival of Autumn with a classic French onion beef stew. Slow-cook chuck steak in red wine with carrots, thyme, and French onion soup mix for a rich and flavorful meal. Prepare a double batch for easy freezer storage and enjoy as a delicious pie filling.
Ingredients:
  • 27.30 gm olive oil
  • 1.2kg beef chuck steak, excess fat trimmed, cut into 3cm pieces
  • 1 brown onion, cut into thin wedges
  • 2 carrots, peeled, coarsely chopped
  • 3 garlic cloves, finely chopped
  • 180ml (2/3 cup) red wine
  • 40g pkt French onion simmer soup mix
  • 7 fresh thyme sprigs, plus extra, to serve
  • 15.00 gm cornflour
  • Mashed potatoes, to serve
  • Steamed green beans, to serve
Instructions:
  • In a large non-stick frying pan over high heat, heat 1 tablespoon of oil. Cook half of the beef, turning occasionally, for 8 minutes until golden. Transfer to a slow cooker using tongs. Repeat with the remaining beef.
  • In the same pan, heat the rest of the oil. Add the onion and carrot and sauté over medium heat until tender, about 5 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and simmer until reduced, about 3 minutes.
  • Transfer the fragrant onion mixture into the slow cooker followed by the French onion soup mix, thyme, and 500ml (2 cups) water. Give it a good stir to blend the flavors together. Cover and cook on HIGH for 3 hours 40 minutes, or until the beef reaches the desired tenderness.
  • Mix the cornflour with 1 1/2 tbsp of cold water and pour it into the slow cooker. Stir well until incorporated. Cover and cook on HIGH for 20 minutes or until the beef is tender. Season to taste and serve sprinkled with extra thyme alongside mashed potatoes and steamed green beans.
