French Onion Soup IV

French onion soup elevated with white wine, served with toasted French bread and melted Swiss cheese.
Ingredients:
  • 1 onion, sliced into thin rings
  • 0.25 cup margarine
  • 2 (10.5 ounce) cans beef consomme
  • 2 (10.5 ounce) cans beef broth
  • 1.5 cups water
  • 0.75 cup white wine
  • 8 ounces sliced Swiss cheese
  • 7 slices French bread
Instructions:
  • In a large pot, caramelize the onions in butter for 5 minutes until tender. Stir in consomme, broth, water, and wine. Simmer on low for 45 minutes.
  • Preheat your oven to 350°F (175°C).
  • For each bowl, layer Swiss cheese slices on the bottom, followed by a slice of bread. Pour in the soup, add another slice of bread, top with more Swiss cheese, and bake until the cheese is melted and gooey.
