Easy and delicious homemade French onion soup surpasses the packet kind.
Ingredients:
  • 80g butter
  • 4 large brown onions, sliced crossways into rings
  • 2 tsp plain flour
  • 1.5L (6 cups) beef style liquid stock
  • 125ml (1/2 cup) dry red wine
  • 1 bouquet garni sachet
  • 1 30cm baguette (French stick), cut crossways into 12 slices
  • 55g (1 cup) finely shredded gruyere cheese
Instructions:
  • In a large saucepan, melt butter over medium heat. Sauté onions and garlic until soft and lightly golden, about 10 minutes. Sprinkle in flour and cook until it bubbles and pulls away from the pan, for about 1 minute. Pour in stock, wine, and bouquet garni, bring to a boil, then simmer uncovered on low for 30 minutes until slightly thickened. Remove bouquet garni, season with salt and pepper to taste.
  • Preheat grill on high. Arrange baguette slices on a baking tray and toast both sides under the grill until light golden. Sprinkle cheese evenly on each slice, then return to grill until cheese melts.
  • Ladle the flavorful soup into bowls and elegantly top with the crispy baguette slices.
