French Onion Soup

French onion soup: Caramelized onions create a flavorful and rich broth. Savory, comforting meal served with crusty bread and gooey melted cheese on top.
Ingredients:
  • 4 medium onions
  • 2 tablespoons butter or margarine
  • 2 cans (10.5 oz each) condensed beef broth
  • 1 1/2 cups water
  • 1/8 teaspoon pepper
  • 1/8 teaspoon dried thyme leaves
  • 1 dried bay leaf
  • 4 oz Gruyère, Swiss or mozzarella cheese
  • 4 slices (3/4 to 1 inch thick) French bread
  • 1/4 cup grated Parmesan cheese
Instructions:
  • Peel and slice the onions to measure 4 cups. In a 4-quart nonstick Dutch oven over medium-high heat, melt the butter. Add the onions and cook uncovered for 10 minutes, stirring every 3 to 4 minutes.
  • Lower the heat to medium-low and continue cooking uncovered for 35 to 40 more minutes, stirring well every 5 minutes, until the onions turn a rich golden brown color (note that onions will shrink as they cook).
  • Combine broth, water, pepper, thyme, and bay leaf in a pot and bring to a boil over high heat. Once boiling, reduce the heat slightly so the mixture gently bubbles. Cover and simmer for 15 minutes. While simmering, shred 1 cup of Gruyère cheese using a grater.
  • Adjust the oven rack close to the broiler. Select the broil setting on the oven control. Arrange the bread slices on a cookie sheet. Broil with tops about 5 inches from heat for 1 to 2 minutes until golden brown. Flip the bread over and broil for an additional 1 to 2 minutes until golden brown. Transfer the toasted bread to 4 ovenproof bowls or individual ceramic casseroles (avoid glass due to broiler heat).
  • Take out the bay leaf from the soup, then serve the soup in bowls. Add a generous topping of Gruyère cheese and sprinkle with Parmesan cheese. Finally, place the bowls in a pan with shallow sides.
  • Place the soup bowls with their tops under the broiler about 5 inches from the heat source for 1 to 2 minutes, until the cheese is melted and golden brown. Keep a close eye to prevent burning. Enjoy with extra French bread if desired.
