French onion soup

French onion soup elevated with wine and brandy for a cozy, soul-warming experience.
Ingredients:
  • 50g (2 1/2 tbsp) butter
  • 750g brown onions, thinly sliced
  • 5.00 gm caster sugar
  • 500ml (2 cups) beef style liquid stock
  • 500ml (2 cups) water
  • 250ml (1 cup) dry white wine
  • 60ml (1/4 cup) brandy
  • Salt & freshly ground black pepper
  • 8 2cm-thick slices baguette (French bread stick)
  • 90g (3/4 cup) coarsely grated gruyere cheese
Instructions:
  • In a large saucepan over medium-high heat, melt the butter with the oil until sizzling. Turn up the heat to high and stir in the onions, cooking uncovered and stirring constantly for about 5 minutes until they start to soften.
  • Lower the heat to medium and sprinkle in sugar. Let it cook uncovered for about 30 minutes, stirring occasionally, until the onions turn a beautiful golden caramel color.
  • Pour in the stock, water, wine, and brandy, then generously season with salt and pepper. Allow it to come to a gentle boil over medium-low heat. Reduce the heat to low and let it simmer, uncovered, stirring occasionally, for 15 minutes.
  • Preheat the grill on medium heat. Toast baguette slices under the grill for 1-2 minutes on each side until lightly toasted. Sprinkle a bit of cheese on one side of each slice. Grill for another 1-2 minutes until the cheese melts and turns golden.
  • Pour the steaming hot soup into bowls. Place the cheese toasts on top and add a sprinkle of fresh ground pepper right before enjoying.
