French onion soup

Indulge in the French classic combo of cheesy bread and onion soup.
Ingredients:
  • 60g butter, chopped
  • 36.40 gm olive oil
  • 1kg onion
  • 8.00 gm brown sugar
  • 40.00 ml plain flour
  • 1020.00 gm beef style liquid stock
  • 12 baguette bread slices, each 1.5cm thick
  • olive oil cooking spray
  • 1 garlic clove, halved
  • 250.00 ml grated Swiss cheese
Instructions:
  • In a heavy-based saucepan over medium-low heat, sizzle butter and oil until fragrant. Add onions and 1 teaspoon salt, cooking uncovered and stirring occasionally for 45 to 50 minutes until very soft. Stir in sugar and caramelize the onions for an additional 10 minutes, continuing to stir frequently.
  • In a saucepan, cook the flour, stirring, for 2 minutes. Pour in the stock and 2 cups of water. Lower the heat to a simmer and cook, uncovered, for 15 minutes to meld the flavors.
  • Prepare delicious cheesy bread: Preheat oven to 180°C. Drizzle oil over both sides of the bread and rub garlic on both sides. Place the bread on 2 baking trays and bake for 10 to 12 minutes until light golden, flipping once. Sprinkle cheese on one side of the bread and bake for an additional 3 to 4 minutes until the cheese melts.
  • Serve the hot soup in bowls, garnish with cheesy bread, add a sprinkle of pepper, and enjoy.
