French onion soup

Popular bistro-style soup with robust flavor from fresh thyme sprigs.
Ingredients:
  • 60g butter
  • 1kg brown onions, halved, thinly sliced
  • 4.00 gm brown sugar
  • 750ml (3 cups) beef style liquid stock
  • 125ml (1/2 cup) white wine
  • 2 sprigs fresh thyme
  • 2 crusty bread rolls, cut into 1cm-thick slices
  • 40g (1/3 cup) coarsely grated gruyere or Swiss cheese
  • Fresh thyme sprigs, extra, to serve
Instructions:
  • In a large saucepan over medium heat, heat the oil and butter until sizzling. Sauté the onion for 10 minutes until soft. Sprinkle sugar over the onion and caramelize for 8-10 minutes until golden brown.
  • Add the flour to the pan and cook for 1-2 minutes while stirring. Remove from heat and gradually incorporate the stock and wine, stirring until well combined.
  • 1. Heat the onion mixture over medium heat, then stir in thyme and cook for 5 minutes until thickened. Simmer covered for an additional 5 minutes, stirring occasionally. Season with pepper to taste.
  • Preheat the grill to medium heat. Place bread on a baking tray and toast for 1-2 minutes. Sprinkle with gruyere cheese and continue grilling for another 1-2 minutes until the cheese melts.
  • Serve the soup in bowls and garnish with croutons and fresh thyme.
