French onion soup with cheesy toasties

Experience French cuisine at home this winter.
Ingredients:
  • 250.00 ml caramelised onion (see notes)
  • 40.00 ml plain flour
  • 250.00 gm dry white wine
  • 1 litre beef style liquid stock
  • 4 slices sourdough bread
  • 20g butter, softened
  • 90g gruyere cheese, coarsely grated
Instructions:
  • Heat oil in a large saucepan over high heat. Sauté caramelized onion for 3 minutes until heated through. Add flour and cook for 1 minute. Slowly pour in wine, stirring constantly. Simmer for 3-4 minutes until wine reduces by half and mixture thickens. Stir in stock, cover, and bring to a simmer over medium heat. Simmer covered for 5 minutes until slightly thickened. Season with pepper to taste.
  • Preheat the grill to high heat. Arrange the bread on a baking tray and toast for about 1 minute until golden. Flip the toast over and spread with butter followed by mustard. Sprinkle generously with gruyere cheese. Grill for 1 to 2 minutes until the cheese is melted and golden brown.
  • Place the toast on top of the soup and serve promptly.
