French onion soup with cheesy toasts

French onion soup topped with gooey melted cheese.
Ingredients:
  • 9.20 gm olive oil
  • 20.00 ml fresh sage
  • 20.00 ml fresh thyme
  • 1kg brown onion
  • 60ml dry white wine
  • 1l salt-reduced beef stock,
  • 80g baguette
  • 60g reduced-fat 15% cheddar cheese
Instructions:
  • In a large saucepan over medium-high heat, heat oil until shimmering. Add sage and cook, stirring, until golden and crisp, about 1–2 minutes. Transfer to a paper towel-lined plate.
  • Reheat the pan over medium-high heat. Cook thyme and onion, stirring occasionally, for 20 minutes until onion is very soft and caramelized.
  • Pour in the fragrant wine and simmer until reduced by half. Sprinkle in the flour and stir for 2 minutes until the mixture bubbles and thickens. Slowly pour in the stock and water, then bring it to a vigorous boil. Lower the heat and let it simmer, uncovered, for 25 minutes to develop rich flavors.
  • Preheat grill on high while grilling bread for 1–2 minutes each side until toasted. Sprinkle cheese on one side of each piece of bread and grill for 1 minute or until cheese has melted.
  • Ladle the soup into bowls and garnish with cheesy toasts and sage leaves.
