French onion soup with blue cheese toasts

Blue cheese adds bold flavor to classic French onion soup.
Ingredients:
  • 30g butter
  • 4 brown onions, halved, sliced
  • 20.00 ml plain flour
  • 20.00 ml brandy
  • 1 litre (4 cups) beef style liquid stock
  • 80g blue cheese, at room temperature
  • 4 x 1cm thick slices crusty bread stick
  • Freshly ground pepper
Instructions:
  • In a large saucepan over medium-low heat, melt the butter until it's golden and bubbly. Stir in the onions and cook covered for 30 minutes, stirring occasionally until they are soft and lightly golden.
  • Add the flour and cook for 3 minutes until golden brown. Pour in the brandy and cook, stirring, for 1 minute. Mix in the stock and let simmer for 20 minutes.
  • Cut the cheese into four equal portions. Toast the bread until golden brown. Place a slice of cheese on each toast and spread gently. Ladle the soup into serving bowls. Season with pepper. Serve alongside the delicious blue cheese toasts.
