Cheesy French onion chicken soup recipe

Elevated French onion soup with decadent cheesy garlic bread for a cozy winter meal.
Ingredients:
  • 75g unsalted butter, chopped
  • 36.40 gm olive oil
  • 1.5kg brown onions, thinly sliced
  • 4 garlic cloves, crushed
  • 40g (1/4 cup) plain flour
  • 125ml (1/2 cup) dry white wine
  • 20.00 ml fresh thyme leaves, plus extra, to serve
  • 1.5 L (6 cups) Beef Style Liquid Stock
  • 2 cooked chicken breast fillets, coarsely shredded
  • 1 small baguette, thinly sliced (see notes)
  • 100g gruyere cheese, coarsely grated
Instructions:
  • In a large saucepan over medium-low heat, melt butter and oil. Add the onion and cook for 15 minutes until softened. Increase heat to medium-high and cook for 20 minutes until golden and lightly caramelized, stirring occasionally.
  • - In a hot pan, sauté the garlic and flour together for 1 minute. Pour in the wine, add the thyme leaves, and combine well. Pour in the stock and increase heat. Allow it to come to a boil, then lower the heat to medium and simmer uncovered for 30 minutes, until slightly reduced. Gently mix in the chicken until fully combined.
  • Preheat the grill on high. Line a baking tray with foil. Place bread slices on the tray and grill for about 1 minute until lightly golden. Flip the bread, sprinkle with cheese, and continue grilling for 2 more minutes until the cheese melts.
  • Ladle soup into bowls. Place cheesy toasts on top and garnish with extra thyme before serving.
