Creamy French onion chicken pasta bake recipe

Retro-inspired French onion soup dinner ready in just 25 mins packed with flavor, thanks to the shortcut of using the soup powder.
Ingredients:
  • 250g penne pasta
  • 200g thickly sliced button mushrooms
  • 6 fresh thyme sprigs, leaves removed
  • 1 barbecue chicken, bones removed, meat and skin shredded
  • 60g baby spinach
  • 40g packet French onion soup mix
  • 375ml (1 1/2 cups) Dairy Full Cream Milk
  • 125ml (1/2 cup) Thickened Cream
  • 155g (1 1/2 cups) grated pizza cheese
  • Chopped fresh continental parsley, to serve
Instructions:
  • Prepare a large baking dish by greasing it. Cook the pasta according to the package instructions, then drain it. Next, in a large, deep frying pan over high heat, heat the oil. Add the mushrooms and thyme, and cook for 3 minutes, stirring occasionally, until softened.
  • Preheat the oven grill on high. Add chicken, French onion mix, spinach, milk, cream, and half the cheese to the mushroom mixture. Simmer until combined. Stir in the pasta and season to taste.
  • Spread the pasta mixture into the dish. Sprinkle with the rest of the cheese. Grill for 2-3 minutes until golden. Garnish with parsley before serving.
