Crispy one-pan French onion chicken spaghetti recipe

Indulge in a delicious one pan French onion pasta with crispy chicken, creamy sauce, and garlic bread kick.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 4 chicken thigh cutlets, skin on, trimmed
  • 1 brown onion, halved, thickly sliced
  • 40g packet French onion soup mix
  • 750ml (3 cups) boiling water
  • 250g dried spaghetti pasta
  • 1/3 x 170g packet garlic bread, torn into large pieces
  • 20.00 ml finely grated parmesan
  • 20.00 ml chopped fresh continental parsley leaves
  • 60ml (1/4 cup) cooking cream
Instructions:
  • Preheat the oven to 220C (200C fan forced).
  • In a large deep frying pan over medium-high heat, heat oil until shimmering. Add the chicken, skin-side down, and cook for 5 minutes until golden. Flip the chicken and scatter onion around it. Cook for 4 minutes, stirring occasionally until the onion starts to soften. Transfer the chicken to a plate.
  • Coat onion with savory soup mix, drench in boiling water, and stir until blended. Simmer until it boils. Gently add pasta, nestle chicken back in the pan with skin facing up, cover, and bake for 30 minutes until liquid nearly evaporates.
  • Combine the garlic bread, parmesan, and parsley in a small food processor and pulse until you achieve a coarse crumb mixture. Then, preheat the grill on high heat.
  • Combine the cream with the pasta, then sprinkle the bread mixture on top. Broil on medium-high for 2 minutes or until it turns golden. Serve and enjoy!
