Crispy Rosemary Chicken and Fries

Easy one pan meal ready in 15 minutes, packed with aromatic rosemary, garlic, and oregano. Crispy potato wedges that kids will devour!
Ingredients:
  • 8 chicken thighs
  • 6 small red potatoes, quartered
  • 0.5 cup extra-virgin olive oil, or as needed
  • 1 tablespoon chopped fresh rosemary
  • 1.5 teaspoons chopped fresh oregano
  • 1.5 teaspoons garlic powder
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • In a big bowl, combine the chicken and potatoes. Drizzle with olive oil and mix well to coat. Transfer everything to a large baking dish or a rimmed cookie sheet. Sprinkle with rosemary, oregano, garlic powder, salt, and pepper.
  • Roast uncovered in a preheated oven for 1 hour, basting in the final 15 minutes to achieve a crispy finish.
