Create a fragrant and flavorful chicken dish with crispy skin using lemon, garlic, and rosemary.
Ingredients:
  • 1 whole chicken
  • 1 teaspoon ground black pepper
  • 2 sprigs rosemary
  • 3 cloves garlic, peeled
  • 1 lemon, halved
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Ensure the chicken is dry. Season generously with salt on all sides and inside. Add a dash of black pepper. Scatter leaves from 1 sprig of rosemary over the chicken. Stuff the cavity with remaining rosemary, garlic, and lemon.
  • Position the chicken on a roasting rack in a roasting pan.
  • Roast in the oven until the meat near the bone is no longer pink and the juices run clear, approximately 1 hour. Use an instant-read thermometer to ensure the thickest part of the thigh reads 165 degrees F (74 degrees C).
