Create juicy, flavorful roasted chicken by stuffing it with garlic butter and rosemary.
Ingredients:
  • 3 garlic cloves, crushed
  • 1.5kg whole chicken
  • 2 lemons
  • 60g butter, at room temperature
  • 4 large sprigs fresh rosemary
  • 1 garlic bulb, halved
  • 2 red onions, cut into quarters
Instructions:
  • Preheat oven to 180°C to create the perfect cooking environment. Gently create a pocket under the chicken skin with your fingers for a flavorful and juicy result.
  • Halve 1 lemon and set aside. Cut the rest of the lemon into 4 wedges. Mix butter and garlic in a bowl, season with salt and pepper. Stuff chicken pocket with butter mixture. Fill chicken cavity with rosemary and 3 lemon wedges.
  • Place the chicken in a roasting pan, then squeeze the remaining lemon wedge over it and drizzle with oil. Scatter the garlic around the chicken. Roast for 1 hour or until the chicken is golden and fully cooked.
  • Heat a chargrill to medium. Grill onion and lemon halves until charred, for about 3-4 minutes. Serve with the chicken.
