Heavenly garlic butter with lemon and rosemary elevates roast chicken.
Ingredients:
  • 1 (3 pound) whole chicken
  • 1 cup unsalted butter, softened
  • 1 lemon
  • 3 tablespoons minced garlic
  • 5 cloves garlic
  • 0.25 cup chopped fresh rosemary
  • 5 sprigs fresh rosemary
  • salt to taste
  • 1 teaspoon paprika
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • First, thoroughly wash the chicken and then dry it gently. Prepare some lemon zest by grating the lemon. Cut the rest of the lemon into quarters and set it aside. Using a hand mixer, blend together butter, lemon zest, minced garlic, and 1/4 cup of chopped rosemary.
  • Carefully separate the chicken skin from the meat, creating pockets at the leg and wing joints. Fill these pockets with the rosemary butter mixture, saving some to rub inside the chicken.
  • Season the inside of the chicken generously with salt, pepper, and paprika. Stuff the cavity with quartered lemon, rosemary sprigs, and sliced garlic. Tie the legs together with kitchen twine and tuck the wings under to hold everything in place.
  • Place the chicken breast on the roasting rack in the oven and roast for about 50 minutes until the juices run clear. Remove the 'stuffing', carve, and serve.
