Ingredients:
  • 36.40 gm olive oil
  • 2 garlic cloves
  • 40.00 ml rosemary leaves
  • 6 chicken marylands
  • 2 lemons, cut into quarters
Instructions:
  • Preheat the oven to 200°C. Combine oil, garlic, and rosemary in a mortar and pestle or small food processor. Mix well by pounding or processing. Season with salt and pepper to taste.
  • Lay chicken, skin side up, in a large roasting pan. Drizzle with oil mixture, then massage it over the chicken with your hands. Scatter lemon wedges around and under the chicken. Roast for 1 hour until chicken is golden and fully cooked. Serve with baked lemon wedges on the side.
