Lemon-Rosemary Chicken Breasts

Mediterranean-inspired chicken dish infused with fragrant dill and garlic.
Ingredients:
  • 1 lemon
  • 1 1/2 teaspoons finely chopped fresh rosemary
  • 1/4 teaspoon salt
  • Dash pepper
  • 1 1/2 teaspoons olive oil
  • 1 small garlic clove, minced
  • 2 boneless skinless chicken breast halves
Instructions:
  • Slice 2 thin lemon slices and set them aside. Squeeze 2 teaspoons of lemon juice from the rest of the lemon into a small bowl. Mix in rosemary, salt, pepper, oil, and garlic until combined.
  • Coat chicken breast halves and arrange them on a broiler pan. Place a lemon slice on top of each chicken breast.
  • Broil chicken with lemon slices underneath, 4 to 6 inches from heat for 5 minutes. Turn chicken and broil for an additional 5 to 7 minutes until fork-tender and juices run clear. Remove and discard lemon slices before serving.
