Succulent chicken breasts baked with zesty lemon and aromatic rosemary for a quick, flavorful weeknight dinner option.
Ingredients:
  • 0.33333334326744 cup salted butter
  • 0.33333334326744 cup chopped fresh rosemary
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon juice
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon extra-virgin olive oil
  • 4 skinless, boneless chicken breasts (such as Perdue®)
  • 1 lemon, zested
Instructions:
  • Preheat the oven to 375°F (190°C).
  • In an electric blender, combine butter, rosemary, garlic, 2 tbsp + 2 tsp lemon juice, thyme, and olive oil until smooth. Pour a thin layer into a hot skillet over high heat.
  • In a skillet, sear the chicken breasts and drizzle the remaining butter mixture over them. Cook until golden brown, approximately 5 minutes, flipping as necessary. Transfer the chicken to a baking dish, pour the skillet mixture over it, and sprinkle lightly with lemon zest.
  • Bake in the preheated oven for 25 to 30 minutes until the center is no longer pink and juices run clear. Use an instant-read thermometer to ensure the chicken breast reaches 165 degrees F (74 degrees C). Let it stand for 5 minutes before serving.
