Lemon and thyme chicken with herb pilaf

Enjoy a zesty, herb-infused chicken dish for National Diabetes Week - low-GI and ready in just 30 minutes!
Ingredients:
  • 600g chicken breast fillets, trimmed
  • 65.63 gm lemon juice
  • 36.40 gm olive oil
  • 20.00 ml fresh thyme leaves
  • 2 tsp finely chopped fresh rosemary leaves
  • 1 quantity Herb pilaf (see related recipes)
  • Steamed squash, to serve
  • Green beans, to serve
Instructions:
  • Combine chicken, lemon juice, oil, thyme, and rosemary in a large resealable bag. Seal and shake well to coat. Refrigerate for 15 minutes, if possible.
  • 1. Preheat a non-stick frying pan over medium-high heat. Sear the chicken for 4 to 5 minutes on each side until fully cooked. Transfer to a plate, cover, and let it rest for 5 minutes before thinly slicing.
  • Serve a generous helping of flavorful herb pilaf in each bowl. Add succulent chicken on top. Accompany with a side of squash and beans for a satisfying meal.
