Spicy marinated chicken pieces for a flavor explosion.
Ingredients:
  • 3 long fresh red chillies, seeded, finely chopped
  • 20.00 ml chopped fresh rosemary
  • 2 tsp finely grated lemon rind
  • 9.20 gm olive oil
  • 8 (about 125g each) chicken legs, skin removed
  • 600g Baby Cream Delight Potatoes, halved
Instructions:
  • 1. Preheat the oven to 200°C and line 2 large baking trays with baking paper. 2. In a mortar and pestle, combine chili, rosemary, lemon rind, garlic, and oil, and pound into a coarse paste. 3. Place the chicken in a glass or ceramic dish and rub it evenly with the chili mixture. 4. Cover and refrigerate for 1 hour to marinate.
  • Place the chicken on a lined tray, lightly spray with olive oil, and roast for 30 minutes, turning once, until golden brown.
  • In a microwave-safe bowl, combine the potato with 2 tablespoons of water, cover, and microwave on high for 5 minutes. Drain the potato and transfer it to the lined tray. Lightly spray with olive oil and roast for 20 minutes until crispy and golden.
  • Plate the chicken and potatoes, then garnish with salad leaves for a delicious presentation.
