Elevate your roast chicken with a vibrant, easy-to-make, and healthy international salad.
Ingredients:
  • 1 garlic clove, roughly chopped
  • 1 small red chilli, roughly chopped
  • 125.00 ml salted roasted peanuts
  • 16.00 gm brown sugar
  • 24.40 gm fish sauce
  • 1 small lemon, juiced
  • 1/2 barbecued chicken, skin and bones discarded, shredded
  • 250g beansprouts, trimmed
  • 1 butter lettuce, leaves separated
Instructions:
  • Crush garlic and chili in a mortar and pestle, then add peanuts and crush roughly. Transfer mixture to a large bowl and add sugar, fish sauce, and 2 tablespoons of lemon juice. Stir until fully combined.
  • Combine 2 cups of chicken and beansprouts with the peanut mixture, ensuring they are thoroughly coated. Season with salt. Place lettuce in a bowl and top with the delicious chicken peanut salad before serving.
