Elevate your evening with a vibrant peanut butter salad bursting with flavor and textures.
Ingredients:
  • 500g single chicken breast fillets
  • 250g chat (small coliban) potatoes, cut into eighths
  • 4.60 gm vegetable oil
  • 1 brown onion, halved, chopped
  • 1 small red capsicum, quartered, deseeded, thinly sliced
  • 52.00 gm light crunchy peanut butter (Kraft brand)
  • 10.60 gm soy sauce
  • 5.00 gm caster sugar
  • 70.00 gm warm water
  • 1 bunch bok choy, washed, dried, leaves separated
  • 50g snow pea sprouts
Instructions:
  • In a saucepan, submerge chicken and potatoes in boiling water. Simmer covered over medium-low heat until potatoes are tender, about 5-7 minutes. Drain and let cool for 2 minutes before shredding the chicken.
  • Heat oil in a non-stick frying pan over high heat. Sauté onion for 4-5 minutes until golden. Add cooked onion and capsicum to the potato and chicken mixture.
  • Mix together the creamy peanut butter, savory soy sauce, and sweet caster sugar until well combined. Slowly pour in water while stirring continuously until a smooth sauce forms. Fold the sauce into the potato mixture until fully combined.
  • Arrange the bok choy and snow pea sprouts on serving plates, and generously top with the flavorful potato mixture before serving.
