Ramen Noodle Chicken Salad

Tangy rice wine vinegar adds sweetness to a chicken and ramen salad with soy sauce and peanut oil dressing.
Ingredients:
  • 1 (3 ounce) package ramen noodles
  • 0.5 cup peanut oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1.5 tablespoons white sugar
  • 0.5 cup diced cooked chicken breast meat
  • 3 green onions, minced
Instructions:
  • In a saucepan, bring 2 cups of water to a rolling boil. Add noodles and cook for 3 minutes, stirring occasionally. Drain the noodles.
  • Combine peanut oil, rice vinegar, soy sauce, and sugar in a bowl and whisk until well blended.
  • Combine the dressing with the chicken, noodles, and green onions, then refrigerate for a minimum of 15 minutes before enjoying.
