"30-minute dinner: Grilled chicken salad with baby greens and sesame peanut dressing."
Ingredients:
  • 2 tablespoons creamy peanut butter
  • 1/2 cup toasted sesame oil
  • 1/2 cup apple cider or apple juice
  • 1 tablespoon tamari sauce or soy sauce
  • 1 tablespoon grated gingerroot
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon ground red pepper (cayenne)
  • 2 tablespoons honey
  • 2 boneless skinless chicken breasts (about 6 oz each)
  • 6 cups mixed baby greens
Instructions:
  • Preheat gas or charcoal grill. In a medium bowl, whisk together all dressing ingredients; set aside.
  • Season chicken with a pinch of salt and pepper. Grill over medium-high heat until fully cooked, about 8 to 10 minutes, flipping halfway through. Rest for 5 minutes before slicing the chicken diagonally into 1/2-inch pieces.
  • Plate the salad greens evenly between 2 plates. Top the greens with the chicken slices in an appealing arrangement. Finish by drizzling 2 tablespoons of dressing over each salad. Serve right away. Any extra dressing can be refrigerated for later use.
