Simplify with this zesty lemon-garlic roast chicken, a quick and flavorful weeknight meal option.
Ingredients:
  • 80ml olive oil
  • 1 Garlic & Herb Boneless Chicken
  • 250g by Laurent Sourdough Baguette*, coarsely torn
  • 3 garlic cloves, bruised
  • 1 lemon, zested, juiced
  • 1/2 tsp dried chilli flakes (optional)
  • 1 bunch baby broccoli
  • 1 bunch flat-leaf parsley, leaves picked, finely chopped
Instructions:
  • Preheat the oven to 250°C. Heat 1 tablespoon of oil in a heavy-based roasting pan over high heat. Sear the chicken, skin-side down, for 5 minutes until golden. Remove from heat and transfer the chicken to a plate.
  • Drizzle the pan with 1 tablespoon of oil, add bread and garlic. Sprinkle with lemon zest and optional chili flakes. Season to taste. Arrange the chicken with skin-side up. Pour stock around the chicken, then cover with foil. Roast for 12 minutes, uncover, and drizzle with another tablespoon of oil. Continue cooking uncovered for 10 minutes or until chicken is fully cooked. Finally, cut the chicken into pieces.
  • Cook the baby broccoli in a pot of boiling water until vibrant green and crisp-tender. Mix the parsley, lemon juice, and remaining oil in a bowl.
  • Drizzle the chicken with the parsley mixture and serve alongside baby broccoli.
