Indulgent French onion soup with cheesy broiled bread topping, ideal for cozy nights.
Ingredients:
  • 0.5 cup unsalted butter
  • 4 cups sliced onions
  • 5 cups beef broth
  • 2 tablespoons dry sherry
  • 1 teaspoon dried thyme
  • 1 pinch salt and pepper to taste
  • 4 slices French bread
  • 4 slices provolone cheese
  • 2 slices Swiss cheese, diced
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Prepare all your fresh, delicious ingredients.
  • In a large stock pot, melt butter with olive oil over medium heat. Stir in onions and cook until tender and translucent, being careful not to brown them.
  • Combine rich beef broth, flavorful sherry, and aromatic thyme in the pot. Season generously with salt and pepper. Allow it to simmer for 30 minutes, enhancing the depths of flavor.
  • Preheat the broiler in the oven while you work on the next step.
  • Spoon soup into oven-safe bowls, top each with a slice of bread, add provolone, diced Swiss, and Parmesan on top of the bread. Broken bread is fine too.
  • Arrange bowls on a baking sheet and broil in the oven until cheese is bubbly and lightly browned, about 2 to 3 minutes.
