Succulent beef mince cottage pie topped with crispy hash browns, gooey cheese, and savory French onion soup mix for a delectable twist.
Ingredients:
  • 6 frozen Hash Browns
  • 18.20 gm olive oil
  • 750g beef mince
  • 1 carrot, peeled, coarsely grated
  • 40g packet French onion soup mix
  • 40.00 ml plain flour
  • 80g (1 cup) coarsely grated cheddar
Instructions:
  • Preheat your oven to a piping hot 240°C (220°C fan forced). Lay out the hash browns on a baking tray, and bake for 20 minutes, flipping them over halfway through, until they are beautifully golden and crispy. Then, lower the oven temperature to a gentle 190°C (170°C fan forced) for the next step.
  • Heat oil in a large frying pan over medium-high heat. Cook mince, breaking up any lumps, until lightly browned, about 5 minutes. Reduce heat to medium, add carrot, stir and cook until softened, about 3 minutes. Stir in soup mix, flour, and tomato, and cook for 1 minute until combined.
  • Pour 375ml (1 1/2 cups) water into the mixture and cook, stirring occasionally, for 2 minutes until it slightly thickens. Transfer the cooked mixture to a 1.5L (6 cup) baking dish. Top it with hash browns and generously sprinkle cheese over them. Bake for 15 minutes until the cheese is melted and the sauce is bubbling.
