Delicious quiche with hash brown crust, filled with ham, eggs, and cheese. Perfect for breakfast or brunch.
Ingredients:
  • 3 cups shredded hash brown potatoes
  • 0.33333298563957 cup butter, melted
  • seasoning salt to taste
  • 2 large eggs
  • 1 cup diced cooked ham
  • 1/3 cup finely diced red bell pepper
  • 0.25 cup chopped onion
  • 1 cup heavy cream
Instructions:
  • Preheat the oven to a piping hot 425°F (220°C).
  • In a medium bowl, combine hash browns with melted butter and season with seasoning salt or garlic powder. Mix in the egg until well combined, then press the mixture onto the bottom and sides of a 9-inch springform pan or pie dish.
  • Bake until the potatoes are golden brown and crispy around the edges, about 25-30 minutes in a preheated oven.
  • While the crust is baking, melt the remaining tablespoon of butter in a medium skillet over medium-high heat. Sauté the ham, pepper, and green onion until the bell pepper slightly softens, about 4 minutes. Remove from heat.
  • Once the crust is done baking, generously spread the ham mixture over it, then sprinkle the cheese evenly on top. In a medium bowl, whisk the remaining 5 eggs and cream together, season with salt and pepper to your liking, and mix until smooth. Gently pour this mixture over the ham and cheese layer.
  • Lower the oven temperature to 350 degrees F (175 degrees C) and continue baking until the quiche filling is puffed and the edges are lightly browned, for about 35 minutes.
