Sausage-topped spiralized red potato hash browns - a clever, simple, and delicious breakfast side.
Ingredients:
  • 1 red potato
  • 1 (4 ounce) link sausage (such as Johnsonville®)
  • salt and ground black pepper to taste
  • 1 tablespoon chopped fresh chives, or to taste
Instructions:
  • Create beautiful spiral cuts from the red potato using a spiralizer. Submerge the spirals in cold water, give them a rinse, and place them in a microwave-safe bowl.
  • Microwave potato spirals on high for 1 minute, then blot with paper towels to remove any moisture.
  • Shape the sausage into 2 balls and flatten into discs.
  • Preheat nonstick skillet over medium heat. Shape 2 mounds of potato spirals, season with salt and pepper. Place a sausage disc on each mound, press with spatula to form thin patties. Cook until golden brown, around 4 minutes each side. Sprinkle with chives before serving.
