Cheesy sausage hash brown casserole - a delicious crowd-pleaser!
Ingredients:
  • 1 lb bulk pork sausage
  • 1 container (8 oz) refrigerated prechopped onions
  • 1 container (8 oz) refrigerated prechopped tricolor bell peppers
  • 1 bag (30 oz) frozen country-style shredded hash brown potatoes
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 1 cup sour cream
  • 1 can (10 3/4 oz) condensed Cheddar cheese soup
Instructions:
  • Preheat the oven to 375°F and generously coat a 3-quart casserole with cooking spray.
  • Cook the sausage in a 10-inch skillet over medium-high heat for 3 minutes, stirring occasionally to crumble. Add onions and peppers and cook for an additional 5 minutes until sausage is cooked through and vegetables are tender. Transfer the mixture to a large bowl and mix in hash browns, 1 1/2 cups of cheese, sour cream, and soup. Spoon the mixture into a casserole dish and sprinkle the remaining 1/2 cup of cheese on top.
  • Bake without a cover for 50 minutes, or until the potatoes are soft and the top is a beautiful golden brown.
