Vintage cheddar & chive crackers

Heavenly cheddar crackers that melt in your mouth.
Ingredients:
  • 250g chilled butter, chopped
  • 5.90 gm Dijon mustard
  • 300g (2 cups) plain flour
  • 105g (1 1/4 cups) coarsely grated vintage cheddar
  • 40.00 ml chopped fresh chives
  • Cheddar, to serve
Instructions:
  • Preheat your oven to 180°C. Line 2 baking trays with non-stick baking paper. In a bowl, use an electric beater to whip the butter and mustard until creamy and pale.
  • Combine the flour, cheddar, and chives until mixed. Transfer the mixture to a lightly floured surface and use your hands to form the dough.
  • Split the dough in half. Roll out one portion on a lightly floured surface to a 5mm thickness. Use a 5.5cm-diameter pastry cutter to create discs. Transfer the discs onto lined trays and chill in the fridge for 10 minutes.
  • Bake in the oven for 18-20 minutes, swapping trays halfway through until golden brown. Let cool on trays for 5 minutes, then transfer to a wire rack. Repeat with remaining dough portion. Serve with cheddar.
