Use Bega Strong & Bitey vintage cheddar for extra tasty savory scones.
Ingredients:
  • Melted butter, to grease
  • 450g (3 cups) self-raising flour
  • Pinch of salt
  • 60g butter, chilled, chopped
  • 70g (2/3 cup) coarsely grated Strong & Bitey vintage cheddar
  • 20.00 ml fresh lemon thyme leaves
  • 375ml (1 1/2 cups) buttermilk
  • Quince paste, to serve
Instructions:
  • Preheat your oven to a toasty 220°C, then gently coat a baking tray with luscious melted butter.
  • In a large bowl, mix the flour and salt together. Use your fingertips to blend the butter into the flour until it looks like fine breadcrumbs. Incorporate the cheddar and thyme into the mixture.
  • Pour in the buttermilk and gently mix with a round-bladed knife until just combined. Then, use your hands to bring the dough together in the bowl.
  • Place the dough on a lightly floured surface and knead gently until smooth. Flatten with the palm of your hand to a thickness of about 2cm. Use a 5.5cm round pastry cutter to cut out 15 discs. Arrange them 1cm apart on the tray. Bake for 12 minutes until scones are golden and sound hollow when tapped. Let them cool slightly before serving with quince paste.
