Oat biscuits with vintage cheddar & quince paste

Quick oat biscuits pair perfectly with cheddar and quince paste for unexpected guests. Ready in 30 minutes.
Ingredients:
  • 90g rolled oats
  • 75g plain flour
  • 1.00 gm baking powder
  • 25g butter
  • 82.50 ml finely grated parmesan
  • Pinch salt
  • 125ml buttermilk
  • Plain flour for dusting
  • 120g tub Quince paste
  • 235g block vintage cheddar
Instructions:
  • Combine oats, flour, baking powder, butter, Parmesan, and salt in a food processor until blended. Pour in buttermilk and process until a soft, sticky dough forms. Enclose dough in plastic wrap and let it rest for 30 minutes.
  • 1. Preheat the oven to 200°C and line two baking trays with baking paper. Roll the dough on a floured surface until it is 5mm thick. Use a 5cm cutter to cut rounds from the dough and place them close together (they will not spread) on the trays. Bake for approximately 20 minutes until crisp. Allow to cool on wire racks.
  • Enhance each biscuit with a touch of quince paste and delicate slices of cheese. Serve promptly for a delightful treat. For a different experience, arrange biscuits, paste, and cheese on a platter for a fun DIY snack.
