Oat biscuits served with blue vein cheese & pears

Pair oat biscuits with fine cheese and juicy pears for an impressive cheese platter.
Ingredients:
  • 3 pears (like Beurre Bosc, Josephine or Packham), to serve
  • 21.00 gm fresh lemon juice
  • 150g creamy blue vein cheese (like Blue Castello), to serve
  • 175g (2 cups) instant Oats
  • 75g (1/2 cup) plain flour
  • 24.00 gm brown sugar
  • 1.00 gm baking powder
  • 0.60 gm salt
  • 100g unsalted butter, melted, cooled
  • 60mls (1/4 cup) water
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with non-stick baking paper.
  • In a medium bowl, mix together oats, flour, brown sugar, baking powder, and salt until well combined. Add butter and water, then stir with a round-bladed knife until mixed. Use your fingertips to bring the dough together.
  • Split the dough in half. Roll out one half on a lightly floured surface to about 5mm thick. Cut out biscuits using a 6cm-round fluted cutter and place them on lined baking trays. Repeat with the other half of the dough. Chill the biscuits in the fridge for 15 minutes.
  • Bake the biscuits in a preheated oven until golden, about 25 minutes. Then, cool them on the trays.
  • Core the pears and slice into thin wedges. Toss with lemon juice to keep them fresh. Serve with oat biscuits and blue vein cheese.
