Versatile snack perfect for school days!
Ingredients:
  • 150.00 gm wholemeal self-raising flour
  • 100.00 gm rolled oats
  • 215.00 gm caster sugar
  • 140g tub two fruits, drained
  • 85.00 gm sultanas
  • 125g butter
  • 1.25 gm bicarbonate of soda
  • 20.00 gm boiling water
Instructions:
  • Preheat your oven and grease 3 large baking trays. Line the trays with baking paper. In a large bowl, sift the flour and then mix in oats, sugar, two fruits, and sultanas.
  • In a saucepan over medium-low heat, melt butter and honey together, stirring for 5 to 6 minutes. Remove from heat. In a bowl, mix bicarbonate of soda and boiling water, then stir into the butter mixture until frothy. Combine with flour mixture and stir well.
  • Shape level tablespoons of the mixture into perfectly round balls. Arrange the balls on prepared trays, leaving 6cm of space between each one. Gently press down to slightly flatten the balls. Bake in the oven for 10 to 12 minutes or until they turn a beautiful golden color. Allow them to cool completely on the trays before serving. Enjoy!
