Whip up these delicious oat cookies with pantry essentials for a quick dose of fruity chewiness anytime.
Ingredients:
  • 180g (1 1/2 cups) rolled oats
  • 160g (1 cup) wholemeal plain flour
  • 4.00 gm baking powder
  • 2.50 gm ground cinnamon
  • 2.50 gm ground ginger
  • 120g (3/4 cup) mixed dried fruit
  • 100g (1/2 cup, firmly packed) brown sugar
  • 60mls (1/4 cup) vegetable oil
  • 60g (1/4 cup) skim-milk natural yoghurt
  • 1 egg, lightly whisked
  • 1 ripe banana, well mashed
Instructions:
  • Preheat your oven to 190°C (170°C fan-forced) and line 2 baking trays with non-stick baking paper for effortless cleanup.
  • Take the rolled oats and put them in a large mixing bowl. Combine flour, baking powder, cinnamon, and ginger in a sifter over the oats. Transfer any husks remaining in the sifter to the bowl with dried fruit and sugar, then mix thoroughly.
  • Whisk together oil, yogurt, and egg using a fork. Add the mixture to the flour along with the banana. Mix with a wooden spoon until well combined.
  • Drop dollops of the mixture onto the prepared baking sheets, ensuring they are 3cm apart. With dampened fingers, gently press and mold the mounds into 6mm-thick discs.
  • Bake in a preheated oven for a total of 26 minutes, swapping the trays halfway through, until golden brown and fully cooked. Allow to cool on the trays.
