Whip up quick and delicious cottage cheese pancakes with banana and brown sugar using a blender.
Ingredients:
  • 0.5 cup gluten-free oats
  • 1 scoop protein powder
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 banana
  • 2 eggs
  • 0.5 cup cottage cheese
  • 1 teaspoon vanilla extract
  • water as needed
Instructions:
  • Heat up a griddle or a large skillet over medium heat.
  • In a blender, combine oatmeal, protein powder, brown sugar, cinnamon, and baking powder until finely blended. Transfer the mixture to a large bowl.
  • In a blender, combine banana, eggs, cottage cheese, and vanilla extract until velvety smooth. Pour this mixture into a bowl with dry ingredients and blend into a luscious batter. Adjust the thickness by gently stirring in water until it reaches your desired consistency.
  • Pour a generous 1/4 to 1/2 cup of batter per pancake onto the hot cooking surface. Let them cook until golden brown underneath, around 3 to 5 minutes. Then, flip the pancakes and cook until both sides are golden brown and the middle is cooked through, for about 3 to 5 minutes longer.
