Irresistibly crunchy oat slice for re-energizing tired kids after school.
Ingredients:
  • 150g dried apricots
  • 100g dried apple
  • 2 passionfruit, halved
  • 42.00 gm lemon juice
  • 50.00 gm rolled oats
  • 125.00 ml slivered almonds, toasted
  • 62.50 ml pumpkin seeds (pepitas)
  • 40.00 ml linseed (see note)
  • 75g dark chocolate, chopped
  • 2.30 gm vegetable oil
Instructions:
  • Prepare your 19cm x 29cm slice pan by greasing and lining it with baking paper, ensuring a 2cm overhang on both long ends.
  • Combine apricots, apple, passionfruit pulp, and lemon juice in a food processor and blend until smooth. Transfer the mixture to a large bowl. Pulse oats, almonds, pumpkin seeds, and linseed in the food processor until it resembles fine breadcrumbs. Add the crumb mixture to the fruit mixture and stir well. Press the mixture firmly into a prepared pan and refrigerate, covered, for 1 hour until firm.
  • Prepare a baking tray with parchment paper. Use a serrated knife to slice the ingredients into 16 rectangles and arrange them on the tray.
  • Prepare topping: Combine chocolate and oil in a heatproof, microwave-safe bowl. Microwave on high for 1 1/2 to 2 minutes, stirring every 30 seconds with a metal spoon until melted and smooth. Transfer melted chocolate into a snap-lock bag, cut off a corner, and drizzle over slice. Chill until set, then wrap in plastic before placing in lunchboxes.
