Fruity Oat Shortcakes

Elevate classic shortcake with autumnal fruit pie flavors for a delicious twist.
Ingredients:
  • 1/3 cup quick-cooking oats
  • 3 tablespoons packed brown sugar
  • 1/2 cup milk
  • 3 tablespoons butter or margarine, melted
  • 2 medium firm pears, peeled and cut into 1-inch pieces
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1 can (21 oz) apricot pie filling
Instructions:
  • Preheat oven to 425°F. Combine Bisquick mix, oats, brown sugar, milk, and butter in a large bowl until a soft dough forms. Drop 6 spoonfuls of dough onto an ungreased cookie sheet. Optional: sprinkle with more brown sugar and oats.
  • Bake until perfectly golden brown, for about 8 to 10 minutes.
  • In a 2-quart saucepan, bring pears, cranberries, orange juice, and cinnamon to a boil, then simmer for 3 to 4 minutes until cranberries pop. Add pie filling and mix well. Serve the warm fruit mixture on split shortcakes.
