Quick and irresistible oat biscuits!
Ingredients:
  • 160g (1 cup) wholemeal plain flour
  • 130g (1 cup) natural oat bran
  • 32.00 gm brown sugar
  • 2.40 gm salt
  • 0.63 gm bicarbonate of soda
  • 75g butter, chopped
  • 125ml (1/2 cup) water
  • 1 egg, lightly whisked
  • Natural oat bran, extra, to dust
  • Blue cheese or cheddar, to serve
Instructions:
  • Preheat your oven to 180°C and prep 2 baking trays with non-stick baking paper.
  • In a large bowl, mix together the flour, oat bran, sugar, salt, and bicarbonate of soda. Use your fingertips to rub the butter into the mixture until it looks like fine breadcrumbs. Add water and use a round-bladed knife to mix until it just comes together. Transfer the dough to a floured surface, knead until smooth, then cover with plastic wrap and refrigerate for 30 minutes.
  • Divide the dough into 2 equal portions. Roll out the dough with a lightly floured rolling pin until it's about 3mm thick. Cut out biscuits using a 5cm-diameter round pastry cutter and place them on the prepared trays. Lightly brush the tops of the biscuits with egg and sprinkle with the extra oat bran. Bake in a preheated oven for 20 minutes, or until they are golden brown, swapping trays halfway through cooking. Let them cool for 15 minutes before serving with blue cheese, cheddar, and brie.
