"Rosemary oat biscuits: Easy, delicious, perfect with blue cheese or brie for any special occasion!"
Ingredients:
  • Olive oil spray
  • 200g (1 1/4 cups) self-raising wholemeal flour
  • 140g (1 1/2 cups) quick-cooking oats
  • 3 tsp chopped fresh rosemary
  • 1.20 gm salt
  • 55g (1/4 cup, firmly packed) brown sugar
  • 100g butter, melted, cooled
  • 2 eggs, lightly whisked
  • Quick-cooking oats, extra, to sprinkle
  • Blue cheese or brie, to serve
Instructions:
  • Preheat the oven to 180°C. Lightly grease 2 baking trays with olive oil spray. In a large bowl, mix flour, oats, rosemary, salt, and bicarbonate of soda.
  • In a medium bowl, mix sugar, butter, and egg together. Add this to the flour mixture and combine using a wooden spoon. Then, use your hands to knead the dough until firm.
  • Lightly sprinkle oats on a clean work surface. Divide the dough into 2 equal portions. Roll out each portion on oats to 3mm thickness. Use a 5.5cm round pastry cutter to cut out discs. Place on a tray and prick with a fork. Bake in the oven for 10-12 minutes until light golden, rotating trays halfway through. Cool on a wire rack before serving.
  • Enjoy the biscuits with a side of blue cheese or brie.
