Herbed oat crackers

Delicious herb-infused oat crackers, ideal for picnics and outdoor gatherings.
Ingredients:
  • 150.00 gm traditional rolled oats
  • 1 pinch bicarbonate of soda
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp chives, chopped
  • 36.40 gm olive oil
  • Cheeses, to serve
Instructions:
  • Preheat the oven to 160C (140C fan-forced). In a mixing bowl, combine dry ingredients and herbs. Season with salt and pepper, then make a well in the center.
  • Combine oil and 5 tablespoons of hot water with the oats until a sticky dough forms using a wooden spoon or rubber spatula. Transfer the mixture onto a sheet of non-stick baking paper, and press it into a 24cm x 16cm rectangle using wet fingertips.
  • Divide the dough in half lengthwise and slice each half into 12 triangles. Use half triangles on the edges to create whole crackers by pressing them together. Transfer the triangles onto a baking tray and separate them. Bake for 40 minutes or until the underside is dry and lightly golden. Allow to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely. Serve alongside cheeses.
