Herbed Cornish Hens

Indulge in a savory herbed Cornish hen dish for a delightful dinner.
Ingredients:
  • 3 Rock Cornish hens (about 1 pound each)
  • Salt and pepper to taste
  • 1/4 cup butter or margarine, melted
  • 1/2 teaspoon dried marjoram leaves
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon paprika
Instructions:
  • Preheat oven to 350°. Season hens' cavities with salt and pepper, then place them on a rack in a shallow roasting pan, breast sides up.
  • Combine all remaining ingredients; generously brush the hens with a portion of the mixture. Place a meat thermometer into the thickest part of the inner thigh, ensuring the tip doesn't touch the bone. Roast uncovered for about 1 hour, basting the hens with the mixture 5 or 6 times, until the juices run clear when the thickest parts are cut to the bone (reaching at least 165°F). Dispose of any leftover butter mixture.
  • Using kitchen shears, neatly halve each hen by cutting along the backbone from the tail to the neck and down the center of the breast before serving.
