Cornish Hen with Tart Cherry Sauce

Simmer tart cherry sauce while roasting herbed Cornish hens. Perfect for weeknights or special dinners.
Ingredients:
  • 0.5 cup white wine
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon dried rosemary
  • 0.125 teaspoon paprika
  • 5 tablespoons unsalted butter, melted
  • 2 Cornish game hens
  • 1 (15 ounce) can tart cherries, drained
  • 1.5 cups red wine
  • 0.25 cup pulp-free orange juice
  • 1 tablespoon packed brown sugar
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour, or as needed
Instructions:
  • Preheat oven to 350°F (175°C).
  • Mix sea salt, black pepper, thyme, garlic powder, rosemary, and paprika in a bowl. Brush 5 tablespoons of butter evenly over the hens on a baking sheet, then evenly coat the hens with the spice mixture.
  • Roast the hens in a hot oven for about 1 1/2 hours, basting with white wine every 30 minutes, until fully cooked and juicy. Use an instant-read thermometer to check that the thickest part of the thigh reads 180°F (82°C).
  • Combine cherries, red wine, orange juice, and brown sugar in a saucepan. Bring the mixture to a boil for 2 to 3 minutes. Lower the heat to medium-low, add 2 tablespoons of butter, and cook until the sugar dissolves and the butter melts, about 10 minutes. Sprinkle flour into the sauce and whisk until it thickens, about 2 to 3 minutes. Finally, drizzle the cherry sauce over the cooked hens before serving.
