Cornish Hen with Bulgur-Bacon Stuffing

Perfect recipe for a romantic dinner for two.
Ingredients:
  • 1 slice bacon, chopped
  • 1 small onion, chopped (1/4 cup)
  • 1/4 cup water
  • 1 teaspoon chicken bouillon granules
  • 3 tablespoons uncooked bulgur
  • 1/4 cup shredded zucchini
  • 1/4 cup chopped fresh mushrooms
  • 1/2 teaspoon chopped fresh or 1/8 teaspoon dried thyme leaves
  • 1 Rock Cornish hen (1 1/2 lb)
  • 1 tablespoon butter or margarine, melted
Instructions:
  • - In a 1-quart saucepan, sauté the bacon and onion over medium-high heat until the bacon is cooked and onion is tender. Remove the bacon and onion from the pan. - In the same saucepan, bring water and bouillon granules to a boil. Add bulgur, then remove from heat and let it stand for 15 minutes. - Finally, mix in the bacon mixture, zucchini, mushrooms, and thyme. Enjoy!
  • Preheat oven to 350°F. Stuff hen's body cavity with the stuffing and secure the opening with a skewer. Put the hen, breast side up, on a rack in a shallow roasting pan, then insert a meat thermometer into the thigh muscle without touching the bone. Brush the hen with some melted butter.
  • Bake uncovered for 1 to 1 hour 15 minutes, basting occasionally with the remaining butter, until the hens' juices run clear when the thickest pieces are cut to the bone (reaching a minimum of 165°F).
  • Begin by delicately removing the stuffing from the body cavity of the hen. Using kitchen scissors, skillfully cut the hen in half along the backbone from the tail to the neck. Serve each perfectly halved hen with its delicious stuffing for a stunning presentation.
